RECIPE – Bacon-wrapped Butternut Fries with Cinnamon Applesauce, feat. Karuna’s Empower

Ingredients

For the applesauce:

  • 2 cups KARUNA’S EMPOWER
  • 4 fuji apples, peeled, cored, and chopped
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger

For the butternut fries:

  • 1 small butternut
  • 8 oz bacon, classic cut

Instructions

  1. Preheat oven to 400°F (205°F). Prepare a baking tray. Line with parchment paper if necessary.
  2. Slice the butternut into long rectangles (slightly larger than fries), removing the skin and seeds. Take one strip of bacon, twist, and wrap around the butternut. Place on baking tray and bake for 15-20 minutes, flip halfway through.
  3. While the butternut is baking, in a large saucepan heated on high, add in the apples. Stir and cook for 5 minutes until apples start to soften. Add in KARUNA’S EMPOWER, cinnamon, nutmeg, and ginger. Stir to mix and simmer for 10 minutes. Turn heat off, mash, and let cool.
  4. Plate and enjoy by dipping the butternut fries into the applesauce.
