RECIPE – Halloween Chocolate Fudge Cupcakes Feat. Karuna’s Pro-Fit

Ingredients

For the Cupcake:

  • ½ cup KARUNA’S PROFIT
  • ¼ cup plain Greek yogurt
  • 1 tbsp vanilla extract
  • 1 cup cocoa powder
  • 2/3 cup all-purpose flour
  • ½ cup sugar or zero-calorie sweetener
  • 2 tbsp flaxseed
  • 2 tsp baking powder
  • ¼ tsp sea salt

For the Frosting:

  • ½ cup KARUNA’S PROFIT
  • ¼ cup milk of choice
  • ¾ cup cocoa powder
  • ¼ cup sugar or zero-calorie sweetener
  • 24 candy eyes

Instructions

Make the cupcake

  1. Preheat the oven to 350°F (175°C). Double line a 12-cavity cupcake tray with cupcake liners.
  2. In a large mixing bowl, whisk together the cocoa powder, flour, flaxseed, baking powder, sugar, and sea salt.
  3. In a separate mixing bowl, add in KARUNA’S PROFIT, Greek yogurt, and vanilla extract. Mix until well-combined.
  4. While continuously whisking the dry mixture, slowly pour in the wet mixture and incorporate. Whisk until no clumps remain.
  5. Equally divide the batter among the twelve cavities, tap the tray on the counter several times to release air-bubbles, and bake for 23-25 minutes or until a toothpick comes out clean when inserted into the center. Remove and let cool.

Make the frosting

  1. In a medium mixing bowl, add in all the ingredients for the frosting excluding the candy eyes. Whisk until well-combined.

Assemble

  1. Divide the frosting among the twelve cupcakes. Frost and top with the candy eyes. Enjoy!
