RECIPE – Lemon Poppyseed Baked Oatmeal, feat. Karuna’s Joy-D

Ingredients

  • ½ cup KARUNA’S Joy-D
  • ½ cup old-fashioned rolled oats
  • ¼ tsp baking powder
  • 2 tbsp poppyseeds
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • ½ tsp vanilla extract
  • 2 tbsp monk fruit
  • pinch of sea salt
  • 1 tbsp honey for serving

Instructions

  1. Preheat the oven to 350°F (176°C).
  2. Mix all the ingredients excluding the honey in a small cocotte.
  3. Bake for 18-20 minutes or until golden brown. Top with honey and serve warm.

Notes

For a plant based substitution for the honey, use agave syrup or maple syrup.
